Stuffed Crust Protein Pizza

This protein-packed pizza makes it easy to hit your nutrition goals, delivering 43 grams of protein for the entire pizza—before adding any meat. It’s a quick, easy homemade alternative to frozen or delivery pizza, made with just a few simple ingredients to keep your wellness goals on track.

Ingredients

  • All-purpose flour, I use this kind

  • Whole milk plain Greek yogurt, I really like this kind, but any will do

  • Baking powder

  • Salt

  • Italian seasonings

  • Mozzarella + montery jack cheese blocks

  • EVOO

  • Pizza sauce

  • Toppings of your choice

Protein Pizza Dough (Make one personal pizza)

  • 110 grams of all-purpose flour

  • 100 grams of Greek yogurt

  • 1 1/2 tsp baking powder

  • 2 tsp of salt

  • 1 tbsp of Italian seasoning

Instructions

  • In a bowl, combine all-purpose flour, baking powder, seasonings, and mix well

  • Next, add Greek yogurt to the dry ingredients and knead until the mixture is smooth

  • Roll into a ball and let rest for 5 mins

  • Dust your counter lightly with flour and begin rolling out your dough as thin and as evenly as possible to provide enough space to create the stuffed crust

  • Next, transfer your dough onto a floured pizza pan

Pizza Assembly

  • Shred both blocks of cheese and combine. You will need about 1 1/2 cups of the cheese mixture

  • Begin placing half of your cheese mixture evenly around the perimeter of the pizza crust, leaving about 1/2 inch to fold over the cheese

  • Once the entire perimeter of the pizza crust is covered with your cheese mixture, begin folding the edges of the crust over the cheese to create the stuffed crust

  • Next, spread one to two spoonfuls of pizza sauce on the pizza, avoiding the crust

  • Add the remainder of the shredded cheese on top of the pizza sauce

  • Add additional toppings of your choice

  • Preheat oven to 400 degrees and bake for 20 mins

Have fun and get creative with your toppings! I’ve done barbecue chicken with red onion and peppers for my husband. I’ve also done a chicken and veggie stuffed-crust pizza with EVOO as the base in place of sauce! You can really tailor this pizza to whatever you're in the mood for or to fit within your wellness goals.
